Pasilla pepper buttered inside with corn dough, then stuffed with shredded pork previously cooked in a red sauce, wrapped in corn husk then steamed. with green tomatillo sauce, crema and fresh cheese.

BAJA

Marinated red ancho chili filled with prawns, mango slices and cactus cooked in an apricot sauce.

DURANGO

Roasted poblano pepper stuffed with chicken strips, hominy in a creamy roasted red bell pepper sauce.
