Galerias Festival de Tortas

Due to the French influence in the early 1800’s, bread made from flour became a Mexican staple. Bakeries or “Panaderias” became commonplace and hundreds of different varieties of breads are now available. For the month of March Galerias will feature the Mexican Torta using three types of bread common in Mexico, pan de telera, pan de cemita and birote.

Different regions of Mexico have their torta specialties. From Jalisco is the torta ahogada, literally meaning “drowned sandwich”. This torta consists of a bread roll filled with pork carnitas and tomato sauce, then dipped in a red chile sauce. From Puebla, the bread used is called cemita. Cemita is a round, crusty bread roll.

Galerias has created six tortas to share with you, inspired by our fond memories of growing up in Mexico, our friends at Barriga Llena and Cemitas Poblanas.
